Scents: Intense aromatics, with ripe and spicy dark fruit characters of blackberry and black plum mixed with a touch of pepper and vanilla bean.
Palate: A full bodied, elegant wine it shows a balanced acidity and silky tannins culminating in a long finish on the palate.
Pairing: Slow cooked pork, stews, fatty meats.
Harvested in the cool early morning, the fruit was destemmed with a large proportion of whole berries transferred into open fermenters. Parcels spent between 7-12 dates on skins before being transferred to new (10%) and older French oak barrels for 14 months.
