Palate: Good mid palate weight framed by a slight chalkiness and mineral acidity.
Pairing: Cooked fish and seafood, white meat in sauce.
Whole bunch pressed directly to French Oak barriques with high solids. Wild primary fermentation took 7 to 21 days and was followed by natural malolactic fermentation. The wine then spent 9 months on yeast lees in barrel, being stirred regularly to suspend the yeast lees to give the wine added texture and flavour.
